- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter room temperature
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup caramel chips
- 1 1/2 cups finely chopped apples Granny Smith, Honeycrisp, or Fuji
- Optional: 1/2 cup chopped pecans or white chocolate chips
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
Add the eggs, one at a time, and mix until fully incorporated, followed by the vanilla extract.
Gradually mix in the dry ingredients until just combined.
Fold in the chopped apples and caramel chips. Optional: add pecans or white chocolate chips.
Use a cookie scoop to drop rounded portions of dough onto the prepared baking sheet, spaced about 2 inches apart.
Bake for 10-12 minutes until the edges are golden brown, but the centers are still soft.
Cool on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.
For added sweetness, drizzle warm caramel sauce over the cooled cookies before serving. Enjoy!
