Ingredients
  

For the crust:

  • 1 ½ cups graham cracker crumbs
  • cup sugar
  • 7 tablespoons melted butter

For the peanut butter mousse:

  • 1 ½ cups heavy cream
  • 8 oz cream cheese softened
  • 1 cup peanut butter
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the caramel topping:

  • 1 cup caramel sauce
  • 2 tablespoons heavy cream

Instructions
 

Prepare the crust:

  • Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8–10 minutes until golden brown. Allow the crust to cool completely.
  • Make the peanut butter mousse:
  • In a large mixing bowl, whip the heavy cream until stiff peaks form. In another bowl, beat together the cream cheese, peanut butter, powdered sugar, vanilla extract, and salt until smooth. Gently fold in the whipped cream until fully combined and smooth.

Assemble the pie:

  • Once the crust has cooled, spoon the peanut butter mousse into the crust, spreading it evenly. Cover the pie and refrigerate for at least 4 hours or overnight.

Make the caramel topping:

  • In a small saucepan, heat the caramel sauce and heavy cream over low heat until warm and well combined. Drizzle the caramel over the chilled mousse pie.

Serve and enjoy:

  • Slice and serve chilled. Optionally, garnish with chopped peanuts, chocolate chips, or whipped cream for an extra touch.
