Wash and slice the cucumbers into thin rounds (about 1/8 inch thick). If using garden cucumbers, you may want to peel them.
Halve the cherry tomatoes, or cut larger tomatoes into bite-sized pieces.
Thinly slice the red onion into half-moons.
Optional: To reduce the sharpness of the onion, place sliced onions in a bowl of ice water for 10 minutes, then drain and pat dry.
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, pepper, and honey (if using) to create the dressing.
In a large bowl, combine cucumbers, tomatoes, and onions.
Pour the dressing over the vegetables.
Add the chopped fresh herbs and toss gently to combine all ingredients.
Let the salad sit for 5-10 minutes before serving to allow flavors to meld.
Serve chilled or at room temperature.
