  • 8 slices of day-old bread brioche preferred
  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 2 teaspoons pure vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter melted
  • 3 tablespoons granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping
  • 2 tablespoons unsalted butter melted (for topping)

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  • Cut bread into 1-inch cubes and divide evenly among muffin cups.
  • In a medium bowl, whisk together eggs, milk, sugars, vanilla, cinnamon, nutmeg, and salt.
  • Pour custard mixture evenly over bread cubes in muffin cups.
  • Let sit for 5 minutes to allow bread to absorb custard.
  • Mix remaining cinnamon and sugar in a small bowl.
  • Brush tops with melted butter and sprinkle with cinnamon sugar mixture.
  • Bake for 25-30 minutes until golden brown and set in the center.
  • Cool in pan for 5 minutes before serving warm.
  • Optional: serve with maple syrup, powdered sugar, or fresh fruit.
