- 1/2 cup raw honey
- 2-3 tablespoons hot sauce
- 2 tablespoons apple cider vinegar
- 2 cloves garlic minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1.5 pounds boneless skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and freshly ground black pepper to taste
- 3 cups cooked brown rice
- 4 cups mixed greens
- 1 cucumber diced
- 1 avocado sliced
- 1 cup cherry tomatoes halved
- 1/2 red onion thinly sliced
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
- 2 tablespoons toasted pumpkin seeds or almonds
- Lime wedges for serving
Prepare the hot honey sauce by combining honey, hot sauce, apple cider vinegar, minced garlic, paprika, cayenne pepper, and salt in a saucepan. Simmer for 5 minutes until slightly thickened.
Cut chicken into bite-sized pieces and season with olive oil, garlic powder, onion powder, salt, and pepper.
Sear chicken in a hot skillet for 3-4 minutes per side until golden brown.
Add two-thirds of the hot honey sauce to the chicken, tossing to coat. Cook for 2-3 minutes until glazed and chicken reaches 165°F.
Layer bowls with brown rice, mixed greens, and prepared vegetables.
Top with hot honey chicken, sprinkle with feta, cilantro, and seeds.
Drizzle with reserved sauce and a squeeze of lime juice before serving.
