Ingredients
  

  • 1/2 cup raw honey
  • 2-3 tablespoons hot sauce
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1.5 pounds boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 3 cups cooked brown rice
  • 4 cups mixed greens
  • 1 cucumber diced
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons toasted pumpkin seeds or almonds
  • Lime wedges for serving

Instructions
 

  • Prepare the hot honey sauce by combining honey, hot sauce, apple cider vinegar, minced garlic, paprika, cayenne pepper, and salt in a saucepan. Simmer for 5 minutes until slightly thickened.
  • Cut chicken into bite-sized pieces and season with olive oil, garlic powder, onion powder, salt, and pepper.
  • Sear chicken in a hot skillet for 3-4 minutes per side until golden brown.
  • Add two-thirds of the hot honey sauce to the chicken, tossing to coat. Cook for 2-3 minutes until glazed and chicken reaches 165°F.
  • Layer bowls with brown rice, mixed greens, and prepared vegetables.
  • Top with hot honey chicken, sprinkle with feta, cilantro, and seeds.
  • Drizzle with reserved sauce and a squeeze of lime juice before serving.
